White Chocolate and Coconut Cake

I’m a white chocolate lover and there’s this cake that doesn’t stay for long in our house. It’s usually gone after two or three days, including the crumbs. It’s the white chocolate and coconut cake. So for the very first post, I’d like to share this recipe with you.
You’ll need:
  • 23 cm springform tin
  • 200g unsalted butter
  • 300g sugar
  • 200g flour
  • 4 eggs, beaten
  • 100g desiccated coconut
  • 100g white chocolate, melted
  • 2tsp vanilla extract
  • 275g sour cream
How to:

(1) Preheat the oven to 160c

(2) Mix the coconut and flour together in a bowl and set aside

(3) Cream the butter and sugar together until pale and fluffy

(4) Gradually add the eggs and vanilla

(5) Add half of the coconut-flour and half of the sour cream to the mixture, and mix well

(6) Add the remaining coconut-flour and sour cream and mix well

(7) Add the melted white chocolate while mixing

(8) Place the mixture in the tin

(9) Place the tin in the oven and bake for 45-60 minutes

Serving: good with vanilla ice cream, whipped cream, custard, berries purée
