Summer Berries Cobbler

OK, summer’s long gone, but it doesn’t mean we can’t enjoy some berrylicious desserts. Today I bring you berries cobbler, a quick and easy dessert, that’s supposed to come out messy looking, because the berries and their juices mix in with the batter and make it all gooey, and if you ask me – that’s the best kind of cobbler!

For a cobbler that’ll serve 6-8, you’ll need:

  • 20x20cm or 23x23cm tin
  • 100g unsalted butter
  • 300g frozen berries, defrosted
  • 200g sugar, plus more for sprinkling
  • 140g  plain flour
  • 2 tsp baking powder
  • Pinch of fine sea salt
  • 250ml whole milk
  • 2 tsp vanilla extract

How to:

(1) Preheat oven to 175c

(2) Melt the butter in a small saucepan over a low heat or in the oven, using an ovenproof dish.

(3) In a bowl, whisk together flour, baking powder, sugar and salt.

(4) Add milk and vanilla extract; mix until well combined.

(5) Once completely melted, add butter to mixture and stir to combine.

(6) Pour mixture into the tin

(7) Scatter the berries (and their juices, if using frozen ones) into the center

(8) Place the tin in the oven and bake for 30-40 minutes, until top is golden (and messy and somewhat wobbly, of course)

Serving: serve warm, or at room temperature with whipped cream, creme fraiche, ice cream or lemon custard.
