Maple pecan cookies

Once I was at a friends house and couldn’t stop eating the cookies she baked. I made sure the cookies were right next to me the whole evening. By the end of that evening, I went home with a box full of those cookies.

The next day, when I had friends over and nothing to serve with their tea, I had no choice but offer some of the precious cookies. They liked it and with each and every cookie they ate I felt something deep inside me. I think I was grieving…

Anyway, few months later I found a recipe online and the outcome is similar to my precious ones. I hope you like it as much as I do.

For 20 maple pecan cookies, you’ll need:

  • Your oven tin, covered with baking paper
  • 100g butter, softened
  • 15g brown sugar (Demarera)
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 140g flour
  • pinch of salt
  • 100g pecan nuts, roughly ground, in a food processor
  • Approx. 120g icing sugar, for coating

How to:

(1) Preheat oven to 160c and cover the oven tin with baking paper

(2) Place the butter, sugar, maple and vanilla in a bowl and mix, using a hand mixer, until fluffy

(3) Add the flour and salt and mix only until the mixture resembles a dough

(4) Add the pecan nuts and continue mixing, only to spread the pecan evenly in the dough

(5) create small balls (2.5-3 cm each) and place on the tin

(6) Place the tin in the oven and bake for 25 minutes

(7) After taking the tin out of the oven, allow the cookies to cool for 5 minutes

(8) Place the icing sugar in a bowl

(9) Dip the cookies in the icing sugar (one by one or several at a time) until fully coated. If you prefer a less sweet flavour, dust the icing sugar to taste

Serving: great tea time treat.
