Berry Fool

This amazingly elegant, simple and delicious dessert is basically made by a sweetend fruit purée, stirred and folded into whipped double cream (single cream when it’s not available, or when you want your dessert less fatty, of course).
The name fool is derived from the French word foulé, which means crushed, and refers to the crushed fruit. In the following recipe I’m using mixed berries. My favourites for the purée are blackberries, raspberries, blackcurrant, redcurrants and strawberries. Though it can be made with any berry or berries of your choice. Remember to serve in sophisticated looking glasses (ice cream or wine glasses), just to make it look even more delicious than it already is, and top with some fresh berries!
For 4 fools, you’ll need:
- 4 serving glasses
- 1 quantity of berries purée, half of which should be smooth. You get to decide the texture of the other half.
- 200ml double (or single) cream
- 80g mascarpone cheese
- fresh berries, for decoration
How to:
(1) Whisk the cream until it thickens and forms small, soft peaks
(2) In a seperate bowl, beat the mascarpone cheese until soft and smooth
(3) Gently, mix the mascarpone with the whipped cream
(4) Stir in the smooth half of the berries purée into the cream mixture and whisk until well combined
(5) Divide the remaining purée (can be either smooth or not, it is now up to your preference) among 4 serving glasses
(6) Spoon the cream mixture on top of the puree gently, so the layers won’t mix
(7) Chill for at least 3 hours before serving
Serving: top with some fresh berries of your choice before serving. Some mint leaves can be used as decoration as well
