To my opinion, Berries Purée can be a great addition to almost any dessert and it’s super easy to prepare. You also get to choose your favourite berries to star it. For this recipe, I think the blackberries, raspberries, blackcurrant and redcurrants blend very well together. Strawberries can be a dded as well.
In order to prepare the berries purée I use a food processor. If you don’t have one, you can use a stick blender. Otherwise, purée fruits by hand or fork (though it’ll take a little more effort and time). The following recipe will make approximately 200ml purée. I recommend to gradually add the sugar, to taste.
You’ll need:
200g frozen berries, defrosted
50g caster sugar
lemon juice from 0.5 lemon
How to:
(1) Place the ingredients in a food processor
(2) Process to an even texture
If you want your purée to be smooth, just rub it through a fine sieve to remove the seeds.
The leftovers can always be mixed with natural yogurt (makes it more healthy, knowing you blended the fruit mix yourself, right?)
What can you use your purée for: pancakes, vanilla based cakes (such as white chocolate and coconut cake, cheesecake), instead of the jam filling in Victoria sponge cake, berries fool or mousse (smooth puree) and feel free to be creative and share it with me.
